Mine is more

My sourdough starter,
made from flour, water
equal parts by weight
fed awakened in the morning
before it’s time to bake,
when the starter bubbles
I mix with the strongest
flour I can find
for taste some rye
some salt,

then stretch and fold
until gluten binds,
from sticky into smooth
it swells a bit and just before
I head to bed,
the loaf is shaped
into a basket in the fridge.

The morning after
I heat the oven
with my cast-iron pot
and scored the loaf
is baked
until the loaf is ready
to rest until it cools.

This is not a recipe
it’s a method that I learned
from Youtube I’ll admit
but nowadays I find
that bread I buy is less
while mine is more.

My homemade bread

Today we are given a sort of carte blanche by Punam at dVerse to celebrate the upcoming Diwali. We could write about cleaning, cooking your favourite dish, the joy of giving or how you celebrate your favourite festival. My choice was to write about bread-making.

    How wonderful, Björn! I think nothing is more satisfying than baking your own bread. After my first disastrous attempt, I have never tried baking sourdough bread again. Your lovely ode to bread making inspires me to try again.

  3. Well, for me this WAS a recipe … I already knew the ingredients and have made it more than several times, however your poem shed a whole new light on the “process.” Cheers.
